As I lately have a little time, I was searching on the web last week. Attempting to find fresh, interesting thoughts, inspirational dishes that I’ve never tasted before, to amaze my loved ones with. I was fine tuning the main recipe to make it for the taste of my family. I must say it was a terrific success. They loved the taste, the thickness and loved having a treat like this in the middle of a hectic workweek. They basically demanded more, many more. Thus next time I’m not going to commit the same mistake. I’m likely to twin the volume to keep them happy.

Peel the peaches.
Remove the stone by any available method.
Juice the lemon.
Place the peach sliced into a food processor along with the lemon juice.
Puree the peach until smooth.
Pour the pureed peach into a big jar.
Add mint then lemon and peach slices if desired then fill it up with water. Put the whole jar into the fridge or serve straight away with ice cubes.
