Curd can be made of any fruit while desserts can be made keto. So here it is, a keto lemon curd that can be spread on keto desserts. Yippee!!!

As I lately have a little time, I was surfing on the internet a few days ago. Trying to find new, stirring thoughts, inspiring dishes that I have never used before, to astonish my family with. Looking for quite some time yet could not find lots of interesting things. Right before I thought to give up on it, I came across this yummy and simple dessert by chance. The dessert looked so fabulous on its photo, it required urgent action.

It had been not so difficult to imagine how it is made, its taste and just how much my husband will probably like it. Actually, it is quite easy to please the man in terms of cakes. I was fine tuning the initial formula to make it for the taste of my loved ones. I can mention it had been a terrific success. They enjoyed the flavour, the overall look and enjoyed having a sweet such as this in the middle of a hectic week. They basically demanded even more, a lot more. So the next occasion I am not going to make the same mistake. I’m going to double the quantity .

Pour a cup of water in a medium size saucepan and place it on the cooktop to boil.

Grate 1 lemon’s zest.

Squeeze 4 lemon to get the juice.

Separate eggs as we only need the yolks.

Put yolks into a metal mixing bowl.

Pour the juice, lemon zest, a teaspoon of stevia or sweetener of choice and a pinch of salt into the mixing bowl as well then mix it together.

Turn cooktop to low heat and place the mixing bowl on top of the simmering water.

Whisk yolks continuously until completely blended and keep whisking it as the curd cooks and becomes thick. It takes about 5 minutes.

Remove mixing bowl from the heat and wait for a couple of minutes to cool then put butter into the curd as well.

Whisk them together. Try for sweetness and add more sweetener if desired. It shouldn’t look like this:

Pour curd into a jar or a bowl to store it in a cool place.

Use it with sweet scones, muffins, pancakes, doughnuts, pound cakes or biscuits.
